Chocolate Chip Banana Muffins

Though I'm not a big fan of cooking, baking is one of my favorite things! Not only do I love having sweet treats to eat, but it adds a little extra heat to the house. After last weekend's blizzard, aka #snowpacalypse2016, I'll take all the heat I can get!

This morning I made Chocolate Chip Banana Muffins. My momma used to make these all the time and they have always been one of my favorites. It's a great way to use those bananas you bought with every intention of eating, yet you let sit until they looked like this...

Not all that appealing, but perfect for muffins. This recipe makes around 24.

2-3 ripe bananas
​3/4 cup of sugar
1 egg
1/3 cup melted butter
​1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups flour
1 cup chocolate chips (dark chocolate is always best)
Preheat the oven to 375 (F).
Combine the butter, sugar, bananas and egg in a mixer.
In a separate bowl, stir together the flour, salt, baking powder and baking soda. Slowly add this mixture to the wet ingredients and mix until fully combined.
Lastly, stir in the chocolate chips.* 
Spoon into lined muffin tins.**
​Bake for 20 minutes. 

*Though some may say you shouldn't actually use the mixer for this last step, my mom taught me to just lift the head of the mixer up a little and use a low speed to mix them in without crushing any of them.
**Since I don't have all the handy tools I was accustomed to in my parents' kitchen, I just used two spoons: one to scoop out a heaping spoonful of the batter and the other to catch any drips and to scrape off the first spoon.
